Sorry again for the silence. I was outside Havana. I spent a week in Bayamo city, the Granma’s province capital, east of Cuba. Me and other fellows for Havana, took part of the 3th Goumet Festival. This even, this time with more taste than glamour, was create by both: Alicia García and Ana Busquet. They manage the Visual Gourmet project and work together at the Cuban Cinema Archive. This time they join Domingo Cusa as a team partner. Cusa is an passionate about the history and cuisine of his homeland.

During four days in Havana citizens and Granma’s ones, shared traditional food and modern culinary trends.

Cusa has researched the culinary traditions of his province and encourages others in the area to recovery and preservate manners and recipes inherited from the earliest inhabitants of the area. The Mandanga the Bollo Prieto, the Narcal, Matahambre, the soft donuts, the sausages and cassava are some of the Bayamo’s culinary curiosities presented at the event. Granma province have a high culinary potential but little experience in gastronomy which affects with poor quality of services.

For first time Alicia and Ana bring out the Gourmet Festival from urbanites grounds. The idea of this event, came from a personal interest and now they found after an institutional support. Despite this, the Gourmet Festival is a private initiative to promote the rescue of traditions, share experiences and link the Cuban culinary world with the arts, music, film and literature.

Alicia Garcia is the daughter of one of the most important figures in Cuban cuisine, Sergio Garcia, founder of the restaurant El Ajibe. The Garcia family before the revolution was the owner of the popular restaurant Rancho Luna, famous for the way to cook chicken, recipe kept as a family secret.
The event left good impressions on the audience, found many flavors and gave all funny moments. Eating is not only a natural act is also a cultural and historical event. A meeting like this opens many doors to understanding the roots of each region and the reflection on the culinary historical values of the nation.

Disculpen la ausencia. Otra vez ha viajado fuera de La Habana. He pasado una semana en Bayamo, la capital de la provincia Granma, participando en el 3er Festival Gourmet. Este evento, esta vez con más sabor que glamour, fue creado, y es organizado desde hace tres años, por Alicia García y Ana Busquet. Esta edición sumó al equipo a Domingo Cusa, presidente de Infotur en Granma y un apasionado de la historia y la culinaria de su terruño.

Durante cuatro días habaneros y granmenses, compartieron comidas tradicionales y tendencias gastronómicas modernas.

Cusa ha investigado las tradiciones culinarias de su provincia y con su trabajo estimula el rescate y conservación de costumbres y recetas heredadas desde los primeros habitantes de la zona. La mandanga, el Bollo Prieto, el Narcal, el matahambre, la rosca blanda, las butifarras y el casabe, son algunas de las curiosidades culinarias bayamesas presentadas en el evento. Granma es una provincia con mucho potencial culinario pero muy poca experiencia en la gastronomía lo que incide en la baja calidad de los servicios.

Por primera vez Alicia y Ana llevan el Festival Gourmet fuera de los predios citadinos. La idea de este encuentro, parte de un interés personal que luego de mucho trabajo encontró apoyo institucional. A pesar de esto el Festival Gourmet es una iniciativa privada para fomentar el rescate de las tradiciones, compartir experiencias y vincular el mundo culinario cubano con las artes plásticas, la música, el cine y la literatura.

El evento dejó buenas impresiones en los asistentes, descubrió sabores a muchos y regaló momentos divertidos a todos. Comer no es solo un acto natural es también un acto cultural e histórico. Un encuentro como este abre muchas puertas al entendimiento de las raíces de cada región y a la reflexión en torno a los valores históricos culinarios de la nación.
